Wash and clean the beef ribs, removing the membrane.
Season the beef ribs with mustard, jerk seasoning, smoked paprika, scotch bonnet powder, and garlic powder, patting the seasoning in.
Let the beef ribs marinate for 1 to 2 hours.
After marinating, add barbecue sauce to the beef ribs and grill for 10 to 15 minutes.
Wash the red kidney beans and add them to a pot with garlic, salt, and water; boil until soft.
Once the beans are soft, add one can of coconut milk, scallion, thyme, and green sweet pepper; boil for 5 minutes.
Wash 3 cups of jasmine rice and add it to the pot with the beans.
Add butter to the rice if desired, then cook on medium heat for 10 minutes, then reduce to low for another 15 minutes.
In a separate pan, heat oil and add curry powder, onions, garlic, scotch bonnet pepper, sweet pepper, and ginger paste.
Add about 1/4 cup of coconut milk and then add the shrimp; cook until the shrimp turn pink and cover for 3 minutes to finish cooking.
