Whole wheat flour adds fiber.
Melt unsalted butter over medium heat.
Stir in flour to thicken and simmer for about a minute.
Pour in a quarter cup of water and let the mixture thicken.
Add sugar and bring to a boil, then reduce heat and simmer until the color darkens slightly.
Set the mixture aside to cool slightly.
Peel and thinly slice 6-7 baking apples.
Transfer apples to a large bowl and sprinkle with cinnamon, mixing to coat.
Pour in the butter sauce and mix everything together for the filling.
Roll out one portion of pie dough into a rough 12-inch diameter circle.
Wrap the dough over a lightly floured rolling pin to transfer it to the pie plate.
Press the dough into place with a little overhang around the edges.
Pour in the apple filling and mound it slightly in the center.
Roll out another portion of dough into a rough circle.
Cut strips of even thickness from the dough using a pizza cutter or knife.
Lay the longest strip across the middle of the pie, then add two more strips on either side.
Peel back the second and fourth strips and lay another longest strip down the center.
Continue this pattern until the lattice is complete.
Use remaining scraps of dough to fill in gaps around the edges and tuck into the pie plate.
Pinch the edges for a professional look and brush the top with egg wash (egg mixed with sugar).
Bake at 425°F for 15 minutes, then reduce heat to 350°F and bake for another 45 minutes.
Cool for at least an hour before slicing.
