In a bowl, mix together 1/4 cup of olive oil, 1/2 teaspoon of apple cider vinegar, 3/4 teaspoon of turmeric, 1/4 teaspoon of salt, 1/2 teaspoon of ground fennel, 1/2 teaspoon of garlic powder, and 1/4 teaspoon of black pepper.
Combine the chopped cauliflower and sliced onion with the dressing mixture.
Spread the cauliflower and onion mixture on a baking sheet.
Bake in the oven at 350°F for about 30 minutes until caramelized and golden.
Stir the cauliflower about 10 minutes into the cooking time to ensure even cooking.
Remove from the oven and let it sit before serving.
