Sweet potatoes add nutrients and flavor.

Greek yogurt offers similar creaminess with less fat.
Grate onion using a fine grater to prevent the potato mixture from darkening.
Grate potatoes, preferably using a food processor with a fine grater, and mix with the grated onion to keep the mixture light in color.
Add 1 teaspoon of salt to the potato and onion mixture and mix well.
Let the potato mixture sit in a sieve for a few minutes to remove excess moisture.
Add 1 to 2 tablespoons of vegetable oil to the potato mixture to help with frying and prevent sticking.
Heat vegetable oil in a skillet over medium heat until hot.
Spoon the potato mixture into the skillet in a thin layer and fry until golden brown, about 3-4 minutes per side.
Remove the fried potato pancakes from the skillet and place them on paper towels to absorb excess oil.
Serve hot with sour cream and sprinkle with fresh herbs.
