Grate 1 large onion first to prevent grated potatoes from turning dark.

Grate 1 kg of potatoes and mix with the onion to keep the mixture light.

Make sure to drain the potatoes and add back the settled starch to the potato mixture.

Add 1 tsp of salt and 2 tbsp of olive oil or sunflower oil to the mixture.

Heat sunflower oil in a skillet until hot, ensuring it covers the bottom of the pan.

Spoon the potato mixture into the hot skillet and fry for 4-5 minutes on each side over medium heat.

Place the cooked potato pancakes on paper towels to absorb excess oil.

Serve the pancakes with Greek tzatziki sauce or Moldovan sauce.
