Traditionally served during family gatherings and celebrations, these crispy potato pancakes showcase the simplicity and heartiness of Belarusian cuisine. Today, variations exist across Eastern Europe, with each region adding its own twist, making draniki a cherished dish beyond its borders.

Peel and grate 6 Idaho potatoes.
Soak the grated potatoes in room temperature water for 5-10 minutes.
Squeeze the grated potatoes in a paper towel to remove excess water.
Pour out the brown water and keep the starch that settles at the bottom.
Add the starch back to the grated potatoes in a medium bowl.
Grate 1/2 onion and add it to the potatoes.
Add 1 teaspoon onion powder, 1 teaspoon garlic powder, 1/2 teaspoon salt, 1/2 teaspoon paprika, 1/4 teaspoon black pepper, 1 egg, 3 tablespoons sour cream, and 1/2 teaspoon corn starch to the bowl.
Mix all ingredients together with a spatula or wooden spoon.
Heat a thin layer of oil in a pan on the stove.
Spoon 2 heaping tablespoons of the potato mixture into the pan and fry until browned on one side, then flip and brown the other side.
Remove the pancakes from the oil and place them on a paper towel-lined plate to absorb excess oil.
Serve with sour cream or applesauce.
