Traditionally made by simmering bones and vegetables, it embodies the essence of French culinary technique—transforming simple ingredients into something rich and nourishing. Today, bouillon is enjoyed worldwide, with variations including chicken, vegetable, and even fish stocks, each offering unique flavors and uses in various cuisines.

Place beef bones in a large pot and cover with water.
Bring to a boil over high heat, then reduce to a simmer.
Skim off any foam that rises to the surface for a clearer broth.
Add chopped vegetables, onion, garlic, bay leaves, thyme, and peppercorns.
Simmer for at least 4 hours, adding more water if necessary.
Strain the broth through a fine mesh sieve into another pot or bowl.
Discard solids and return broth to heat if needed.
Season with salt to taste and simmer for an additional 30 minutes.
Add chopped parsley and simmer for 10 more minutes.
Cool the bouillon and store in airtight containers.
