flour
🥗Healthier: almond flour
💰Cheaper: all-purpose flour
Almond flour adds richness but can be pricier than regular flour.
In a large bowl, add all-purpose flour, powdered sugar, and salt, and mix until well blended using a spatula.
Cut cold butter into cubes and blend it into the flour mixture using a pastry cutter until it resembles the size of peas.
In a small bowl, mix egg yolk, cold water, and vanilla extract until well blended.
Add the egg yolk mixture into the flour mixture and form a dough using your hands.
Flatten the dough into a 9-inch tart pan and prick holes into the dough with a fork.
Place aluminum foil or parchment paper on top of the dough and add weights (like rice or beans) to blind bake it.
Freeze the dough for about 15 minutes, then bake at 375°F for 20 minutes.
Remove the pie weights and let the dough chill on the counter.
In a bowl, add softened butter and mix with a hand mixer until soft.
Gradually add 8 ounces of almond paste in one-inch pieces, mixing until well incorporated.
Sprinkle sugar into the mixture and add eggs one at a time, mixing until smooth and scraping the bowl with a spatula.
Fold in flour using either the mixer or a spatula until well mixed to create the almond filling.
Spread mixed berry preserve on the bottom of the pre-baked tart shell using a spatula.
Dollop the almond filling around the dough and spread evenly with an offset spatula to cover the jam.
Sprinkle sliced almonds on top of the filling.
Place the tart pan on a baking sheet and bake at 350°F for 35 to 40 minutes until the top is golden brown.
Allow the tart to cool on a cooling rack before sprinkling powdered sugar on top.
