Combine whole wheat flour with salt and 1 tbsp of olive oil.

Gradually add water until a smooth dough comes together.

Coat a bowl with olive oil and roll the dough around to cover it.

Let the dough rest for about 24 hours.

Mash whole boiled and peeled potatoes.

Season the mashed potatoes with fenugreek, mint leaves, chopped cilantro, chopped chillies, cumin seeds, coriander seeds, black caraway seeds, chilli powder, and salt.

Tear off some of the rested dough and roll it into a ball on the counter, coating it in flour.

Press the dough flat and use a rolling pin to roll it into a long flat oval.

Spread softened butter all over the dough and roll it over itself into a log.

Roll the dough into a longer cylinder and coil it around itself in a spiral.

Roll the coiled dough into a flat circle.

Add the filling to the center and place another circle of dough over the top.

Crimp the edges together and roll flat.
