In a dutch oven or large pot, add 1 tbsp oil, heat and add mushrooms and salt, brown for about 5 minutes, then remove mushrooms.

Add 1 tbsp oil to the pan, then add onion, garlic, salt, and pepper. Cook until onions are tender.

Add the ground beef and cook until browned.

Add flour, stir, and cook for about 1 minute.

Add chicken broth, scraping the bottom of the pot. Cook for a few minutes until slightly thickened.

Add the noodles and cook uncovered for 12-15 minutes.

Turn off heat, add sour cream and mushrooms, and stir well.
