1/2 cup brown sugar
1/2 cup unsalted butter
1/2 cup vegetable oil
1 egg
1 cup pureed pumpkin
1 teaspoon vanilla
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon cloves
1 cup semi-sweet chocolate chips

Start by creaming together 3/4 cup granulated sugar, 1/2 cup brown sugar, and 1/2 cup unsalted butter.

Once combined, add 1/2 cup vegetable oil and mix.

Crack in 1 egg and add 1 cup of pureed pumpkin.

Turn the mixer on low and add 1 teaspoon of vanilla.

In a separate bowl, combine 2 1/4 cups of flour, 1 teaspoon of baking soda, 1/2 teaspoon of salt, 1 teaspoon of cinnamon, 1/2 teaspoon of ginger, and 1/2 teaspoon of cloves.

Add the dry ingredients to the wet mixture and mix until just combined.

Fold in 1 cup of semi-sweet chocolate chips by hand.

Cover the dough with plastic wrap and chill in the fridge for about 30 minutes.

Scoop the chilled dough onto a lined cookie sheet using an ice cream scoop.

Bake in a preheated oven at 350 degrees for 8 to 10 minutes, pulling them out when the edges are barely brown and the middle looks just set.
