Sift together 2 cups of self-rising flour, 1 teaspoon of ground cinnamon, and 1 teaspoon of pumpkin pie spice in a sifter and set aside.

In a large bowl, combine 1/2 cup of canola oil, 1/2 cup of white sugar, 1/2 cup of light brown sugar, 1 large egg at room temperature, 1 teaspoon of evaporated milk mixed with 1 teaspoon of baking soda, 1 cup of canned pumpkin puree, 1 teaspoon of pure vanilla extract, and 1/2 teaspoon of pure pumpkin spice extract. Mix on medium speed until well combined.

Slowly add the dry ingredients to the wet ingredients and mix until well incorporated.

Fold in 10 ounces of dark chocolate chips until evenly distributed in the cookie dough.

Scoop the cookie dough onto a 9 by 13 inch cookie sheet lined with parchment paper, aluminum foil, or greased with baking spray.

Preheat the oven to 350 degrees Fahrenheit and bake the cookies for about 10 to 11 minutes.

Remove the cookies from the oven and let them cool on a wire rack for 2 minutes.

Plate the cookies and taste them.
