Pumpkin Chocolate Chip Cookies

1 stick (1/2 cup) unsalted butter, room temperature
1/2 cup granulated sugar
1/2 cup packed dark brown sugar
1 large egg
1/2 cup fresh pumpkin puree (or canned)
7.5 oz all-purpose flour (about 1.5 cups)
1 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup semi-sweet chocolate chips

Cream together 1 stick (1/2 cup) of unsalted butter and 1/2 cup of granulated sugar with 1/2 cup of packed dark brown sugar.

Add 1 large egg and beat until incorporated.

Add 1/2 cup of fresh pumpkin puree (or canned) and mix well.

In a separate bowl, whisk together 7.5 oz of all-purpose flour, 1 teaspoon of baking soda, 1/4 teaspoon of salt, 3/4 teaspoon of ground cinnamon, 1/8 teaspoon of ground cloves, 1/8 teaspoon of ground nutmeg, and 1/4 teaspoon of ground ginger until combined.

Add the dry ingredients to the wet ingredients and mix with a hand mixer until just combined, stopping before all flour is incorporated.

Add 1 cup of semi-sweet chocolate chips right before the flour is fully mixed in.

Use a large cookie scoop to portion out the dough onto a parchment or Sil Pat lined baking sheet.

Bake in a 350°F oven for about 15 minutes.
