Drizzle olive oil into a nonstick skillet.
Add ouy sausage to the skillet and cook until golden brown.
Add bell peppers and onions to the skillet, cooking until soft and translucent.
Remove the sausage, bell peppers, and onions from the skillet and set aside.
Add more olive oil to the skillet if needed, then add the small potatoes cut into quarters.
Season the potatoes with creole seasoning, onion powder, and parsley, stirring to combine.
Add a little water to the potatoes to help them cook faster, then cover the skillet.
Cook the potatoes for about 15 minutes until tender and slightly crispy on the outside.
Set the potatoes aside once cooked.
Drizzle olive oil back into the skillet and crack in 2 eggs for sunny side up eggs.
Season the eggs with a little salt and black pepper.
Cook the eggs until done to your liking, flipping them to ensure they are well done if preferred.
Remove the eggs from the skillet and set aside.
Return the cooked potatoes and sausage back into the skillet, mixing everything together.
Add the cooked eggs on top of the mixture.
Sprinkle cheddar cheese over the top and cover to melt the cheese.
Garnish with fresh parsley before serving.
