Traditionally served as a way to fuel a long day, it combines ingredients like eggs, potatoes, and meats in a single skillet for convenience. Today, this dish has found its way into diners and brunch menus across the country, with many variations featuring seasonal vegetables or different types of meats.

Heat a cast iron skillet over medium-high heat.
Cut 10 slices of thick cut bacon into 1-inch pieces and add to the skillet, cooking until crispy.
Remove bacon and place on a paper towel-lined plate to drain excess fat.
In the same skillet, add a little extra virgin olive oil if needed.
Chop bell pepper and add to the skillet, cooking until softened.
Dice 3 red potatoes into cubes and add to the skillet with the bell pepper, cooking until golden brown, about 8-10 minutes.
Add the cooked bacon back into the skillet and stir to combine.
Make wells in the mixture and crack 4 eggs into each well.
Add a couple of pieces of butter to the skillet and cook the eggs to your liking.
Once eggs are set, sprinkle shredded cheddar cheese over the top and cover until melted.
Garnish with chopped parsley and season with salt and black pepper before serving.
