Heat a large skillet over medium heat.
Cut slices of bacon into pieces of your preferred size.
Use a potato slicer to slice potatoes, then cube them for hash browns.
Soak cut potatoes in cold water to prevent oxidation.
Drain and rinse the potatoes to remove excess starch, then dry them with a paper towel.
Add bacon grease to the skillet and then add the dried potatoes, stirring to coat them.
Season the potatoes with salt and pepper, and cook until browned.
Add chopped onions to the skillet and cook until softened, about 5 minutes.
Add bell peppers to the skillet and continue cooking until they start to brown.
Return the cooked bacon to the skillet and mix everything together.
Make indentations in the mixture and crack eggs into each indentation.
Season the eggs with black pepper and cover the skillet to let them cook until set to your liking.
Turn off the heat, add shredded cheddar cheese on top, cover, and let it melt for a couple of minutes.
Garnish with chopped green onion before serving.
