Heat a large fry pan over medium heat for 2 minutes.
Add 1/4 cup of extra virgin olive oil to the pan.
Add 5 cloves of halved garlic to the oil and mix continuously for about 2 minutes until lightly fried, then remove and set aside.
Add chopped onion, zucchini, and chopped bell peppers to the same pan and mix to coat in olive oil, stirring every minute for about 9-10 minutes until the zucchini is translucent.
Add 1 teaspoon of sweet smoked Spanish paprika and mix quickly to avoid bitterness.
Add 1 cup of finely grated tomato and the sautéed garlic back into the pan, season with sea salt and black pepper, and mix well.
Simmer the mixture for 3-4 minutes until the grated tomato has slightly thickened.
Crack 4 organic eggs into individual bowls to avoid shells and broken yolks.
Create pockets in the vegetable mixture and add the eggs, then sprinkle with fresh pepper and cover the pan with a lid.
Cook for another 3-4 minutes until the egg whites are firm and yolks are creamy, then remove the lid and check the doneness of the eggs.
Sprinkle with freshly chopped parsley before serving.
