Banana peppers offer a milder heat.
Heat 1 tablespoon oil in a kadhai.
Add 3-4 Kashmiri red chilies.
Add 3-4 medium-sized tomatoes, roughly chopped.
Add 1 green bell pepper, roughly chopped, and a handful of mint leaves.
Mix well and add salt to taste.
Cook on medium flame until tomatoes soften.
Add 1/2 teaspoon sugar to balance flavors.
Add 1 teaspoon oregano and 1/2 teaspoon garam masala powder.
Add 2 tablespoons tomato ketchup for flavor.
Cook until everything is soft and well combined, then remove from flame and let cool.
Transfer the mixture to a grinder and grind to a coarse mixture.
In a bowl, combine 1.5 cups flour and 1/4 cup semolina.
Add salt to taste and 1/2 teaspoon cumin seeds, crushed.
Add 1-2 tablespoons ghee and mix well with fingers.
Gradually add room temperature milk to form a stiff dough.
Knead the dough until it is stiff and not too soft.
Take a small portion of the dough and flatten it with a rolling pin to medium thickness.
Use a bowl to shape the bhakri and discard uneven edges back to the dough.
Make holes in the bhakri with a knife to prevent bubbling during cooking.
Heat a tava and place the bhakri on it, cooking on low flame for 1-2 minutes before flipping.
Cook both sides until lightly cooked, then add drops of ghee or oil and press down.
Roast until both sides have brown spots and are crispy.
Prepare 6 bhakris for the pizza.
Spread 1 teaspoon of the prepared tomato sauce on each bhakri.
Add a white sauce made from ghee, roasted flour, milk, and a slice of cheese on top.
Sprinkle grated cheese over the white sauce.
Add boiled sweet corn and sliced bell peppers (red, green, yellow) on top.
Optionally, add olives and jalapeños.
Sprinkle oregano and red chili flakes for seasoning.
Heat a thick-bottomed tava and add a little ghee.
Place the bhakris on the tava and cover with a lid.
Cook on low-medium flame for 5 minutes until the cheese melts and the bhakri is crispy.
Remove from the tava and serve hot.
