7 large sheets phyllo pastry
200g feta cheese
4 large eggs
1 tbsp vegetable oil
60-70ml melted butter
1/2 tsp baking powder

Lay down your phyllo dough sheets on a hard surface lengthwise end to end.

In a bowl add crumbled cheese, pour in yogurt, add 3 eggs and 1/2 tsp baking powder and combine well.

Add 2-3 spoonfuls from the mixture onto the dough in a lengthwise strip, then roll the dough into a tube.

Twist the dough into a spiral.

Beat in a bowl the remaining one egg and 1 tbsp of vegetable oil and pour onto the banitsa, brush evenly and sprinkle some sea salt if desired.

Bake in a preheated oven at 180C for 30-35 minutes or until golden brown.
