Preheat a carbon steel pan on the burner for 10-15 minutes until hot.

Add 1/2 teaspoon of rendered bacon fat to the hot pan and let it melt.

Crack 3 eggs into the pan and wait a little before stirring.

Observe a crust forming on the bottom and some watery whites on top.

Turn off the heat and let the residual heat cook the eggs further.

Salt the eggs after turning off the heat to avoid a weird texture.

Prepare a garlic and paprika oil in a different pan by adding a few gugs of sunflower seed oil.

Add 2 tablespoons of sweet paprika to the oil, being careful not to burn it.

Dice a large clove of garlic and add it to the pan with the paprika oil.

Remove the pan from heat before the garlic burns.

Serve the eggs with a few dollops of yogurt and drizzle the hot garlic paprika oil on top.

Finish with a sprinkle of chives for garnish.

Mix the yolk with the yogurt and garlic oil before eating.
