300g phyllo dough
250g feta cheese
1/4 teaspoon baking soda
250 ml yogurt
3 eggs
115 g melted butter (unsalted)

Thaw the phyllo sheets.

Mix baking soda and yogurt.

Crumble the cheese and add eggs. Mix well.

Add in the yogurt.

Unroll the phyllo sheets. Take one sheet and cover the rest with a clean kitchen towel as they dry quickly.

Brush the phyllo sheet with some of the melted butter.

Place another sheet on top of the first sheet and butter it as well.

Add a few spoons of yogurt-feta mixture on the top phyllo sheet and spread it as a layer.

Roll the phyllo sheet to form a long rope.

Then roll into a spiral and place it in the center of the baking dish.

Repeat the steps until the baking pan is full.

Brush some butter on top of the Banitsa.

Bake in a preheated oven at 180C for 45-50 minutes until flaky and golden.
