Dirty Rice

Melt 1/4 stick of butter in a cast iron pot.

Add chicken livers to the pot and brown them in the butter.

Cook chicken livers for about 30 minutes, flipping occasionally.

Remove cooked chicken livers and set aside to cool on a paper towel.

Chop andouille sausage into small pieces and brown in the same pot for a couple of minutes.

Add 1 pound of 80/20 ground beef to the pot and brown it down.

Add chopped bell pepper, onion, and celery (the Trinity) to the pot and sauté until softened.

Chop the cooled chicken livers finely and set aside.

Add the chopped chicken livers to the pot with the vegetables.

Pour in 2 cups of rice and stir to combine.

Add 5 cups of chicken broth to the pot and bring to a boil.

Cover the pot and let it simmer for about 25 minutes.
