Add oil and 80/20 ground chuck, breaking it up and browning it.

About halfway through, add the Trinity (bell pepper, onion, and celery) and stir for about 8 to 10 minutes until the meat is thoroughly browned and the veggies are soft.

Season with salt to your liking and stir.

Add garlic and stir for about 1 minute until fragrant.

Add Zatarain's dirty rice mix and cool water, stirring and scraping the bottom of the pot to avoid a burn notice.

Replace the lid, ensuring the switch is set to the seal position.

Press cancel to stop sautéing, then press either pressure cook or manual on high pressure, adjusting the cook time to 4 minutes and pressing start.

After 4 minutes, let the pot naturally release pressure for 5 minutes.

Move the switch to the vent position to let all the steam escape and wait for the pin to drop before removing the lid.

Give the dirty rice a quick stir, garnish with parsley, and serve.
