Dirty rice is a traditional Cajun dish that originated in Louisiana, often made with leftover meats and spices.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup celery, chopped
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. 1Rinse the rice under cold water until the water runs clear, then drain.
  2. 2In a large pot, heat a little oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté until softened, about 5 minutes.
  3. 3Add the minced garlic and cook for an additional minute until fragrant.
  4. 4Add the ground beef and ground pork to the pot. Cook until browned, breaking it up with a spoon as it cooks.
  5. 5Stir in the Cajun seasoning, salt, black pepper, and cayenne pepper (if using). Mix well to combine.
  6. 6Add the rinsed rice to the pot and stir to coat the rice with the meat and vegetable mixture.
  7. 7Pour in the chicken broth and bring to a boil.
  8. 8Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  9. 9Remove from heat and let it sit, covered, for 5 minutes.
  10. 10Fluff the rice with a fork and garnish with sliced green onions before serving.

  • 1 lb carrots, peeled and cut into sticks
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup water
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup chopped pecans (optional)

Instructions

  1. 1In a large skillet, melt the butter over medium heat.
  2. 2Add the brown sugar, water, salt, cinnamon, and nutmeg to the skillet, stirring until the sugar is dissolved.
  3. 3Add the carrot sticks to the skillet and stir to coat them in the sugar mixture.
  4. 4Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
  5. 5Simmer the carrots for about 15-20 minutes, or until they are tender and the sauce has thickened.
  6. 6If using, stir in the chopped pecans and cook for an additional 2-3 minutes.
  7. 7Remove from heat and let cool slightly before serving.
  8. 8Serve warm as a side dish.
