Introduce the dish: dirty rice.

List ingredients: long grain rice, beef broth, chicken bouillon cube, green pepper, onion, ground beef, celery salt, Adobo seasoning, Lipton onion soup mix, sage.

Chop vegetables (green pepper, celery, onion) and set aside.

In a skillet, heat 1 teaspoon of oil and sauté the chopped vegetables until soft.

Add an additional tablespoon of cooking oil if needed.

Season the sautéed vegetables with 1.5 teaspoons of Adobo seasoning, 0.5 teaspoons of thyme (optional), and 1 heaping teaspoon of sage.

Add 2 tablespoons of salt to the mixture.

Add the ground beef (approximately 3/4 pound) to the skillet and cook with the vegetables.

Chop leftover pork chop and add it to the mixture (optional).

Stir the mixture and note that the ground beef is 80/20 blend with minimal fat, so draining is not necessary.

In a pot, combine 3 cups of rice with 6 cups of liquid (4 cups beef broth from a 32 oz container and 2 cups water).

Add the cooked meat and vegetable mixture to the pot with the rice.

Add 2 tablespoons of butter to the pot.

Bring the mixture to a boil (not a rolling boil), then reduce heat to low for 15 minutes.

After 15 minutes, turn off the heat and let it sit covered for another 15 minutes before serving.
