How to Make Dirty Rice

Break out a food processor to finely chop the onion, bell pepper, and celery.

Clean the rice to remove starchy water.

Add the cleaned rice to a rice cooker and pour in beef broth.

Preheat the oven to 375°F.

In a cast iron skillet, add chicken liver and season lightly with onion and garlic powder.

Bake the chicken liver for 20 to 25 minutes.

In a pan, brown lean ground beef seasoned with Tony seasoning, onion powder, and garlic powder.

When the beef is almost browned, add a little chicken broth to help crumble the meat.

Once the beef is cooked, add the finely chopped vegetable mix and heat for 4 to 5 minutes.

Grind the cooked chicken liver in the food processor to make a pate and add it to the beef mixture.

Mix well and let it cook for another 5 minutes, tasting for seasoning.

Add the cooked rice to the beef and liver mixture and stir well to combine.

Taste and adjust seasoning with additional Creole seasoning if needed.

Plate the dirty rice and serve with fried fish and potato salad.
