Rinse the rice under cold water until the water runs clear, then drain.

In a large pot, heat a little oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute until fragrant.

Add the ground beef and ground pork to the pot. Cook until browned, breaking it up with a spoon as it cooks.

Stir in the Cajun seasoning, salt, black pepper, and cayenne pepper (if using). Mix well to combine.

Add the rinsed rice to the pot and stir to coat the rice with the meat and vegetable mixture.

Pour in the chicken broth and bring to a boil.

Once boiling, reduce the heat to low, cover, and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.

Remove from heat and let it sit, covered, for 5 minutes.

Fluff the rice with a fork and garnish with sliced green onions before serving.
