Dirty Rice

1/2 pound chicken livers
1 cup and a half chicken broth
1 cup rice (instant)
1 tablespoon cumin
1/2 teaspoon salt
1 teaspoon black pepper
cajun seasoning (to taste)
oregano (to taste)
bay leaves (to taste)
butter (to taste)
garlic (to taste)

Cut up most of the onion, green pepper, and celery for the trinity.

Add butter to the skillet.

Saute the onion, green pepper, and celery for about 5-6 minutes until the onions are translucent and slightly brown.

Add about half a pound of chicken livers to the skillet, breaking them down into smaller pieces.

Season the meat mixture with about 1 teaspoon of black pepper, 1/2 teaspoon of salt, 1/2 to 3/4 tablespoon of cumin, cajun seasoning, oregano, and bay leaves.

Cook the meat mixture until it's done, then add the sautéed veggies back in.

Add 1 and 1/2 cups of chicken broth and about 1 cup of instant rice to the skillet.

Cover and let the mixture simmer until the rice absorbs the broth, stirring occasionally.

Add a bit of butter and garlic to enhance flavor before serving.
