Start by adding the ultimate seasoned oil to the pan and heat it up.
Once the oil is heated, add finely chopped onions and sprinkle with salt.
Cook the onions for about 5 minutes until they are softened.
Add ginger and garlic paste to the onions and cook for about 90 seconds to remove raw flavors.
Stir in chopped garlic and split green chilies, adjusting the amount of chili to taste.
Add the mixed powder (Taste of India brand) to the pan and cook to incorporate the flavors.
Squeeze in some lemon juice to balance the spices.
Pour in the diluted tomato puree and add half a teaspoon of tikka masala.
Heat the base gravy in the pan until it reaches a vigorous temperature.
Add the base gravy all at once and mix well, ensuring everything is combined.
In a separate bowl, combine some of the sauce with the full fat natural bio yogurt to prevent it from splitting, then add the yogurt to the pan.
Stir the yogurt into the sauce until well incorporated, noting that it will darken as it cooks.
Observe the oil splitting, indicating that water content is evaporating and flavors are concentrating.
Add parboiled mixed vegetables to the curry, which were boiled for about 7 minutes until al dente.
Run the vegetables under cold water to stop the cooking process and prevent them from breaking apart.
Add a third of a tomato per portion to the curry, scraping any good bits from around the edges back into the sauce.
Turn the heat down to a minimum and let the flavors absorb into the vegetables.
