Sheet Pan Chicken Shawarma

2 lbs chicken thighs, boneless and skinless
2 tbsp olive oil
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp smoked paprika
1 tsp ground turmeric
1 tsp ground cinnamon
1 tsp cayenne pepper
4 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 lemon, juiced
1 red onion, sliced
1 bell pepper, sliced
1 zucchini, sliced
1 cup cherry tomatoes
Fresh parsley, for garnish

Preheat the oven to 425°F (220°C).

In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne, garlic, salt, black pepper, and lemon juice to create a marinade.

Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to overnight in the refrigerator.

On a large sheet pan, arrange the marinated chicken thighs in the center.

Surround the chicken with sliced red onion, bell pepper, zucchini, and cherry tomatoes.
