Preheat the Blackstone griddle on low until it reaches a cooking temperature indicated by white smoke.
Add a little butter to the griddle.
Add broccoli to the griddle and stir it around in the butter.
Add more butter and then add peas and carrots to the griddle.
Add onions and stir everything up to combine.
Pour soy sauce over the vegetables and add stir-fry seasoning, mixing well.
Let the vegetables cook, stirring occasionally, until they are tender.
Move the cooked vegetables to one side of the griddle to keep them warm.
Add udon noodles to the griddle, breaking them apart as you add them.
Spray a little water on the noodles to help steam them, then stir to warm them up.
Combine the broccoli with the noodles and add more soy sauce for flavor.
Add the peas and carrots to the noodle mixture and stir everything together.
Add oil to the griddle and then add shrimp, which should be extra large, peeled, and deveined.
Season the shrimp with Island seasoning and mix well.
Cook the shrimp for about 2-3 minutes on each side until they turn pink.
Combine the cooked shrimp with the noodle and vegetable mixture.
Spread everything out on the griddle and add more soy sauce and oyster sauce to taste.
Drizzle sesame oil over the mixture and add garlic paste, mixing everything together well.
Taste the stir fry to check for seasoning and adjust as needed.
