1 package leftover pie dough
1 cup diced mushrooms
1 cup diced onions
1 tablespoon oil
1 cup fresh spinach
1 cup crumbled goat cheese
4 large eggs
1 cup milk
1/2 cup cream
1/2 teaspoon salt
1/4 teaspoon pepper
to taste hot sauce (Sriracha or similar)
1 cup shredded Monterey Jack cheese

Heat a pan over medium heat.

Add oil to the pan.

Add chopped mushrooms and onions to the pan and cook until softened.

Add spinach to the pan and cook until wilted.

In a bowl, beat together a few eggs, a little milk, and cream.

Add salt, pepper, and a shot of hot sauce to the egg mixture.

If using, add Monterey Jack cheese to the egg mixture instead of goat cheese.

Prepare a muffin tray by cutting circles from the pie dough and fitting them into the muffin cups.

Spoon the cooked mushroom, onion, and spinach mixture into each muffin cup.

Pour the egg mixture over the filling in each muffin cup until just full.

Preheat the oven to 350°F (175°C).

Bake in the oven for about 30 minutes, checking at 25 minutes for doneness.

Remove from the oven and let cool slightly before serving.
