8 oz turkey sausage

8 oz sliced mushrooms
1/4 cup sliced scallions
1/4 cup shredded Swiss cheese
1 teaspoon pepper
5 eggs
3 egg whites
1 cup low-fat milk

Generously coat a non-stick muffin tin with cooking spray.

Cook 8 oz turkey sausage in a pan until browned.

Add 1 teaspoon oil to the pan and cook 8 oz sliced mushrooms until golden brown.

Transfer the cooked mushrooms to the bowl with the sausage.

Let the mixture cool for 5 minutes.

Stir in 1/4 cup sliced scallions, 1/4 cup shredded Swiss cheese, and 1 teaspoon pepper into the sausage and mushroom mixture.

In a separate bowl, combine 5 eggs, 3 egg whites, and 1 cup of low-fat milk.

Divide the egg mixture evenly among the prepared muffin cups.

Sprinkle a heaping teaspoon of the sausage mixture into each muffin cup.

Bake at 325°F until the tops are just beginning to brown, about 25 minutes.
