4 slices sandwich bread
2 tablespoons butter
1 cup corn (fresh or frozen)
1 cup cheese (cheddar or your choice)
1/2 cup diced ham
1/4 cup chopped chives
4 large eggs
1/4 teaspoon pepper

Cut off the crusts of the sandwich bread all the way around.

Roll out the bread with a rolling pin to about a quarter inch thick.

Butter one side of the rolled out bread.

Press the buttered side of the bread into the muffin tin to form little crusts.

Divide the corn, cheese, ham, and chives between each mini quiche case.

Crack eggs into a measuring cup for easy pouring.

Sprinkle pepper into the egg mixture.

Pour the egg mixture into each mini quiche case.

Bake in a 350 degree oven for about 15 minutes until cooked through.
