1 tbsp tamarind (soaked in water)

Wash the fish and clean it with paper towels, then sprinkle salt on it and let it sit for 10 minutes.

Mix together 1 tsp garlic powder, 1 tbsp roasted ground cumin, 1 tbsp roasted ground coriander, 0.5 tsp garam masala, 1 tsp salt (to taste), 1 tbsp roasted red chili powder, and 1 tsp ajwain in a bowl.

Add 5 small green chilies and 10 cloves of garlic to the mix, and grind them finely.

Squeeze the juice of 1 medium lemon into the spice mixture.

Add 2 tbsp mustard oil and 1 tbsp tamarind (soaked in water) to the spice mixture, adjusting the consistency with oil if necessary.

Marinate the fish with the spice mixture, ensuring it gets into the cuts on the fish for better flavor.

Prepare a special chutney by blending together half a bunch of coriander, 6-7 mint leaves, 4 small green chilies, 1 small onion, 2-inch piece of ginger, 1 tbsp brown sugar, 0.5 tsp salt, 0.5 tsp black salt, 0.5 tsp roasted ground cumin, 0.5 tsp roasted red chili powder, and 1 tbsp tamarind (soaked in water).

Grill the fish on a preheated grill, brushing one side with melted ghee after 3-4 minutes when it starts to color.

Flip the fish after 3-4 minutes and brush the other side with ghee, cooking for another 5 minutes until fully done.
