Moroccan Beef Tajine with Potatoes

Originating from Morocco, tajine is a traditional dish named after the earthenware pot it's cooked in. This slow-cooked stew often features a combination of meat, vegetables, and spices, reflecting the rich culinary heritage of North Africa. Tajine is commonly served during family gatherings and special occasions, embodying warmth and hospitality. Today, variations of tajine are enjoyed worldwide, with different meats and vegetables adapted to local tastes.

Season 900 grams of beef lightly with salt and black pepper.
In a Dutch oven, brown the beef in batches to avoid overcrowding.
Add 2 chopped onions to the pot and cook for about 5 minutes until softened.
Add 3 to 4 cloves of garlic and all the spices (2 tsp cumin, 2 tsp coriander, 1 and 1/2 tsp cinnamon, 1 and 1/2 tsp ginger, 1 tsp paprika, 1/2 tsp turmeric) and cook for about 1 minute to release flavors.
Stir in the can of chopped tomatoes and the browned beef with its juices.
Add 1 and 1/2 cups of beef stock to the pot and bring to a simmer.
Reduce the heat, cover, and let it simmer for about 1 and 1/2 hours.
After 1 and 1/2 hours, add 1 tablespoon of tomato puree, 1 can of chickpeas, 2 chopped carrots, and optional frozen butternut squash.
Add 9 chopped prunes to the pot and mix everything together.
Let it simmer for another hour, checking for tenderness of the beef.
