Moroccan Beef Tajine with Potatoes

Season 900 grams of beef lightly with salt and black pepper.

In a Dutch oven, brown the beef in batches to avoid overcrowding.

Add 2 chopped onions to the pot and cook for about 5 minutes until softened.

Add 3 to 4 cloves of garlic and all the spices (2 tsp cumin, 2 tsp coriander, 1 and 1/2 tsp cinnamon, 1 and 1/2 tsp ginger, 1 tsp paprika, 1/2 tsp turmeric) and cook for about 1 minute to release flavors.

Stir in the can of chopped tomatoes and the browned beef with its juices.

Add 1 and 1/2 cups of beef stock to the pot and bring to a simmer.

Reduce the heat, cover, and let it simmer for about 1 and 1/2 hours.

After 1 and 1/2 hours, add 1 tablespoon of tomato puree, 1 can of chickpeas, 2 chopped carrots, and optional frozen butternut squash.

Add 9 chopped prunes to the pot and mix everything together.

Let it simmer for another hour, checking for tenderness of the beef.
