2 teaspoons ground ginger
1 chicken bouillon cube

Wash and clean oxtails thoroughly, cutting off excess fat.

Dice onion, shallots, bell peppers, and tomatoes; slice garlic and ginger; chop celery and green onions.

Mix seasonings in a bowl: beef bouillon, brown liquid, soy sauce, worcestershire sauce, onion powder, allspice, black pepper, garlic powder, salt, paprika, ground ginger, and chicken bouillon cube.

Marinate oxtails with the mixed seasonings and half of the diced vegetables for about 3 hours in the refrigerator.

Heat avocado oil in a large Dutch oven over medium-high heat.

Brown the larger pieces of oxtails first, then add smaller pieces.

Deglaze the pot with water and add enough water to cover the oxtails; let simmer for about 10-12 minutes.

Add the remaining marinated vegetables to the pot and cover.

After about 2 hours and 15 minutes, check for tenderness; add cannellini beans and cook for an additional 30 minutes to heat through and thicken the gravy.
