Peel the skin off half a lau and cut it into pieces.

Wash the lau pieces with clean water.

In a pan, add 1/2 cup masoor dal.

Add one ripe tomato and sliced green chilies.

Add two chopped onions and 1/2 a garlic clove.

Season with salt to taste, 1/2 tsp chili powder, less than 1/2 tsp turmeric powder, 1/2 tsp cumin powder, and 1/2 tsp coriander powder.

Add regular cooking oil as needed and mash everything well with hands.

Heat the pan and sauté the masoor dal uncovered for 2-3 minutes.

After sautéing, add the chopped lau to the pan and mix well with the dal.

Cover the pan and cook for a while on medium heat.

Stir the lau and dal mixture to prevent sticking to the bottom.

Add 1 liter of water and cover the pan to cook.

After a few minutes, stir the mixture again and cook for another 2-3 minutes.

Prepare a frying pan for tempering by heating regular cooking oil.

Add 2 bay leaves and 3 dried chilies to the hot oil and sauté briefly.

Add chopped onions to the frying pan and sauté until they turn light brown.

Add some of the sautéed mixture back into the frying pan.

Stir and cook for 1-2 minutes.

Finish by adding chopped coriander leaves and let it sit for a minute before serving.
