Karpfen Blau

Cultural Context

Karpfen Blau, or Blue Carp, is a traditional German dish that hails from the regions around the rivers and lakes where carp is abundant. This dish is often served during festive occasions, particularly around Christmas and New Year's, symbolizing prosperity and good fortune. The unique blue color of the carp comes from the poaching process in a vinegar-infused broth. Today, it remains a cherished recipe in German cuisine, with variations found in neighboring countries.

1

Clean the mirror carp from the entrails and remove the gills, but do not remove the mucus.

2

Coarsely chop 2 onions, 1 carrot, and 1/2 celery root and add them to 3-4 liters of water.

3

Add 250 ml of dry white wine, bay leaves, allspice, and salt to taste to the water.

4

Cook the mixture for 25-30 minutes.

5

Pour vinegar over the carp; the mucus will turn a white-blue color. Repeat on the other side to achieve the blue color.

6

Pour the vegetable broth into a deep pan and put it in the oven at 200°C.

7

Once the broth boils, add the carp and pour the broth over it.

8

Cook in the oven at 120°C for 35-45 minutes.

9

Check readiness by ensuring the fin comes off easily.

10

Pour melted butter over the carp and serve.
