  • 1/2 tsp cumin
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. 1In a large bowl, combine the drained chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
  2. 2In a separate bowl, whisk together the tahini, lemon juice, minced garlic, water, salt, black pepper, and cumin until smooth.
  3. 3Pour the tahini dressing over the chickpea mixture and toss gently to combine.
  4. 4Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
  5. 5Let the salad sit for about 10 minutes to allow the flavors to meld.
  6. 6Serve chilled or at room temperature.
