3 Easy Chickpea Salad Recipes

- ●1 can (15 oz) chickpeas, drained and rinsed
- ●1/2 cup tahini
- ●1/4 cup lemon juice
- ●2 cloves garlic, minced
- ●1/4 cup water
- ●1/4 tsp salt
- ●1/4 tsp black pepper
- ●1/2 tsp cumin
- ●1/2 cup cherry tomatoes, halved
- ●1/2 cucumber, diced
- ●1/4 red onion, finely chopped
- ●1/4 cup fresh parsley, chopped
Instructions
- 1In a large bowl, combine the drained chickpeas, cherry tomatoes, cucumber, red onion, and parsley.
- 2In a separate bowl, whisk together the tahini, lemon juice, minced garlic, water, salt, black pepper, and cumin until smooth.
- 3Pour the tahini dressing over the chickpea mixture and toss gently to combine.
- 4Taste and adjust seasoning if necessary, adding more salt or lemon juice as desired.
- 5Let the salad sit for about 10 minutes to allow the flavors to meld.
- 6Serve chilled or at room temperature.

- 5Taste and adjust seasoning if necessary, adding more salt, pepper, or vinegar as desired.
- 6Let the salad sit for at least 10 minutes to allow the flavors to meld before serving.
