4 medium potatoes, peeled and diced
2 tbsp vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 inch ginger, grated
2 tomatoes, chopped
2 tsp curry powder
1/2 tsp turmeric powder
1/2 tsp cumin seeds
1/2 tsp coriander powder
1/2 tsp salt
1/4 tsp black pepper
1 cup water
2 tbsp fresh cilantro, chopped (for garnish)

Heat the vegetable oil in a large pan over medium heat.

Add the cumin seeds and let them sizzle for a few seconds.

Add the chopped onion and sauté until golden brown.

Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Add the chopped tomatoes and cook until they soften, about 5 minutes.

Stir in the curry powder, turmeric powder, coriander powder, salt, and black pepper, cooking for another minute.

Add the diced potatoes to the pan and mix well to coat them with the spices.

Pour in the water, bring to a boil, then reduce the heat to low and cover the pan.

Simmer for about 15-20 minutes, or until the potatoes are tender, stirring occasionally.

Once cooked, remove from heat and garnish with fresh cilantro before serving.
