Welcome to the channel and introduce the recipe for saltfish sancocho.
List the ingredients: minced garlic, chopped onion, chopped scallions, chopped parsley, sliced carrots, diced christophine, chopped red bell peppers, diced cherry tomatoes, fresh thyme, turmeric powder, black pepper, coconut milk, and saltfish.
Wash the saltfish and remove the majority of the salt; place it in a pot of water to boil until it creates foam.
Drain the water and rinse the saltfish to remove excess salt.
Shred the saltfish into small pieces using hands.
Heat vegetable oil in a pan over medium heat; add garlic and onion, stirring for about two minutes until they simmer down.
Add red bell pepper, carrot, christophine, and tomatoes to the pan; stir and cover to simmer for a few minutes.
Add a little water to the pan, then add turmeric powder and black pepper; cover and cook down for five minutes.
Add the shredded saltfish to the pan and mix well.
Pour in coconut milk, aiming for a creamy consistency; add the rest of the coconut milk after a few minutes.
Cover the pan and allow the coconut milk to cook for a few minutes.
Add chopped parsley and thyme towards the end for fresh flavor.
Taste the dish to check for seasoning; no additional salt is needed due to the saltfish.
Cover and let it cook down for two more minutes before serving.
