Ghanaian Suya Beef Kebab

Suya is a popular street food in Ghana, known for its spicy, smoky flavor. Traditionally made with skewered meat, it is often enjoyed at social gatherings and celebrations. The dish reflects the rich culinary heritage of West Africa, where grilling and bold spices are celebrated. Today, suya has gained popularity beyond Ghana, with variations found in Nigeria and other neighboring countries, making it a beloved dish for many.

Canola oil is a budget-friendly alternative.
Cut beef into thin strips and place in a bowl.
In a separate bowl, mix peanut butter, ginger, coriander, cumin, paprika, garlic, onion, salt, and black pepper to create a marinade.
Add vegetable oil to the marinade and mix well.
Coat the beef strips with the marinade, ensuring they are well covered.
Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Soak skewers in water for 30 minutes to prevent burning.
Preheat the grill to medium-high heat.
Thread the marinated beef onto the skewers, alternating with pieces of tomatoes, onions, and bell peppers.
Place skewers on the grill and cook for 8-10 minutes, turning occasionally, until beef is browned and cooked through.
Remove from grill and let rest for 5 minutes before serving.
Serve with sliced cucumber and additional vegetables on the side.
