Ghanaian Suya Beef Kebab

Today, suya has gained popularity beyond Ghana, with variations found in Nigeria and other neighboring countries, making it a beloved dish for many.

Cut the onion into thin slices to provide more surface area for tenderizing the meat.
Cut the sirloin steak into kebab-sized pieces, keeping the fat on for flavor.
In a bowl, mix freshly ground pepper, finely ground sea salt, and paprika.
Massage the spices into the meat, squeezing the onions to release their juices and tenderize the meat.
Add a little bit of apple cider vinegar to the mixture for flavor and tenderizing effect.
Add olive oil to the mixture to lubricate and help create a crust on the grill.
Mix everything together thoroughly.
Let the meat rest for about three hours, keeping it in the fridge for two of those hours to bring it to room temperature before grilling.
Skewer the meat, separating the pieces slightly to ensure even cooking.
Grill the skewers, turning them often to cook evenly and prevent burning.
Let the meat rest for about ten minutes after grilling before serving.
