First slit the brinjal in the center and put it in saltwater.

In a pan, heat oil and fry the brinjal for 30 seconds and remove.

Take a pan, add a little oil, and add red chili, dry chana dal, urad dal, fennel seeds, coriander seeds, jeera, tamarind, garlic, curry leaves, hing, salt, turmeric powder and fry until golden brown. Once done, let it cool down and make it into a fine powder.

Now take the fried brinjals, add the masala powder, and stuff into the brinjal, keeping it aside.

In another pan, add a little oil, spread the stuffed brinjal, close it with the lid, and cook for 20 minutes on a very slow flame, keeping turning. If required, add salt and coriander, then switch off the flame.
