1

Thoroughly wash the rice a few times until the water runs clear. Soak the rice in water for about 30 minutes, then strain and transfer to a wide pan with water. Bring to a boil, reduce heat, and cook for about 10 minutes until the rice is cooked but not mushy. Fluff with a fork and set aside uncovered to cool.

2

Heat a pan and add 3 to 4 tablespoons of cooking oil. Once heated, reduce heat to low and add cumin seeds and bay leaves. Add chopped onion and 1/4 teaspoon salt, frying until browned, about 8 to 9 minutes. Add garlic and ginger, frying for another 2 to 3 minutes until fragrant.

3

Add cooked chickpeas and spice mix (ground coriander, black pepper, cayenne pepper, garam masala, Kasuri methi) and salt to taste. Fry on medium heat for about 3 minutes, then add 1/4 cup of water or as required and mix well. Reduce heat to low.

4

Gently break any lumps in the rice with wet hands to prevent sticking. Add the rice to the pan and fry for about 2 to 3 minutes. Turn off the heat and garnish with lemon juice and cilantro. Mix well and cover the pan, allowing the rice to rest for 3 to 4 minutes before serving.
