Mloukhieh, a beloved dish in Lebanon and the broader Middle East, is made from the leaves of the jute plant, known for their unique flavor and thickening properties. Traditionally enjoyed during family gatherings, this hearty stew often features chicken or meat, reflecting the importance of communal meals in Lebanese culture. Today, Mloukhieh is celebrated worldwide, with variations seen in Egypt and other neighboring countries, each adding their local twist to this cherished dish.

Soak mloukhieh leaves in water for one hour and squeeze out excess water.
Boil the chicken in water, cleaning off the foam that rises to the top.
Add bay leaves, cardamom, cinnamon sticks, and ginger to the chicken while it cooks.
Chop onion into small chunks and add half to the chicken and half to the mloukhieh.
Saute garlic and cilantro in butter over low heat, using three tablespoons of butter.
Add soaked mloukhieh leaves to the garlic and cilantro mixture, cooking until most of the water evaporates.
Add one cup of lemon juice to the mloukhieh mixture to reduce sliminess.
Pour in vegetable broth slowly without mixing, then add black pepper and seven spices.
Cover and cook on medium heat, checking every five minutes.
Prepare rice by using one and a half cups of water for each cup of rice, cooking until done.
Cut pita bread into cubes and fry until golden brown.
Serve rice topped with mloukhieh, chicken, fried pita, and garnish with vinegar-soaked onion.
