1

Measure 245 g of basmati rice and wash until the water runs clear, rinsing three times.

2

Add enough water to cover the rice and soak for a minimum of 3 hours or overnight.

3

Drain the soaked rice and transfer it to a Vitamix blender.

4

In a measuring cup, combine 3/4 cups boiling water and 3/4 cups milk, then add half of this mixture to the rice in the blender.

5

Blend for a few minutes until smooth, scraping the sides as needed.

6

Add 1 and 1/2 teaspoon yeast, 1 tbsp oil, 75 g chopped cream coconut, and the remaining water and milk mixture to the blender.

7

Blend until very fine and smooth, ensuring it feels like powder between your fingers.

8

Pour the batter into a large bowl and clean out the blender with 1/4 cup of water.

9

Cover the bowl and let the batter rise in a warm area for about 1 to 75 minutes.

10

After rising, mix in 3/4 cups sugar, 1 teaspoon cardamom powder, and 1/4 cup water, ensuring the batter is not too thick.

11

Heat a 10-inch frying pan over medium-high heat and add 1 tbsp oil.

12

Once the oil is hot, pour the batter into the pan and cover with a lid.

13

After 2 minutes, reduce the heat to medium and cook for an additional 6 minutes.

14

Reduce the heat to low for the last 2 minutes of cooking.

15

After 10 minutes, open the lid and place the frying pan in the oven for browning for a couple of minutes.

16

Remove from the oven, cover with paper towel for 45 minutes, then place the lid on it.

17

Once cooled, remove the paper towel, loosen the sides, and cut the macatia.
