2 lbs beef tripe, cleaned and cut into pieces
1 lb pork feet, cleaned and cut into pieces
1 onion, chopped
1 bell pepper, chopped
4 cloves garlic, minced
2 medium tomatoes, chopped
2 carrots, sliced
1/2 cup cilantro, chopped
1/4 cup olive oil
2 tsp oregano
1 tsp cumin
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
6 cups beef broth
1 lime, juiced

In a large pot, heat the olive oil over medium heat.

Add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are soft.

Stir in the chopped tomatoes, carrots, oregano, cumin, salt, black pepper, and red pepper flakes. Cook for about 5 minutes.

Add the cleaned beef tripe and pork feet to the pot. Stir to combine with the vegetables and spices.

Pour in the beef broth and bring the mixture to a boil.

Reduce the heat to low, cover, and let it simmer for about 2-3 hours, or until the tripe and pork are tender.

Once cooked, add the chopped cilantro and lime juice. Stir well to combine.
