Tawa Naan is a popular Indian flatbread traditionally cooked in a tandoor, or clay oven. However, when made on a tawa, it becomes accessible for home cooks without specialized equipment. This versatile bread is often served with various curries and is a staple in many Indian households. Today, Tawa Naan is enjoyed globally, with variations including garlic naan and butter naan, appealing to diverse palates.

Take 3 cups of all-purpose flour and level it off.
Add 2 tablespoons of sugar and 1 teaspoon of salt to the flour.
Add 2 teaspoons of instant yeast to the mixture.
Mix in 3 tablespoons of unsweetened milk powder.
Combine the ingredients and knead the dough by hand or use a machine.
Add 2 tablespoons of oil and 4 tablespoons of room temperature yogurt to the dough.
Gradually add 1 cup of warm water to form a soft dough.
Drizzle some remaining oil on top of the dough and cover it to let it rise until doubled in size.
Prepare the filling by grinding 4 tablespoons of roasted chickpeas and adding spices.
Add 1.5 pounds (approximately 750 grams) of minced meat to the mixture along with 2 chopped green chilies and a small piece of onion.
Include 1 tablespoon of garlic paste and 1 tablespoon of ginger paste.
Add half of the ground spices and 1 teaspoon of salt to the meat mixture.
Incorporate 1 egg and 2 tablespoons of coconut oil for moisture.
Shape the mixture into medium-sized koftas and set aside.
Heat oil in a pressure cooker and sauté 1 tablespoon of ginger paste and 1 tablespoon of garlic paste with half a cup of fried onions.
Add the remaining ground spices and 1.5 teaspoons of salt to the mixture.
Add 1/2 cup of yogurt and 6 tablespoons of tomato puree, then mix well.
Pour in 2 cups of water and bring to a boil.
Shape the naan dough into pieces and roll them out.
Cook the naan in the pressure cooker until bubbles form, flipping once, for about 2-3 minutes total.
